Impressed
"Terroir" expresses the "characteristics of the land"
"Clean water brought by the Echigo Sanzan mountains," "abundant sunlight,"
Niigata's unique blessings, such as its cool climate and mineral-rich soil, produce a wide variety of rich ingredients.
These exquisite products are packed with skill and attention to detail, including "cutlery from Tsubame-Sanjo, a town of world-renowned craftsmanship" and "demitasse cups with a comfortable grip made by a local potter."
This is a carefully selected course that pays tribute to the producers who create it all, focusing on ingredients produced within the prefecture.
Showing respect for Niigata through the stage of food.
This is the "Niigata terroir" that we continue to weave.

"ALBI" by TODAI Co., Ltd.
Elegant yet smart design.
It adds a touch of elegance to your table.
"The story begins in the Echigo Sanzan mountains"
The three mountains of Echigo are Mount Hakkai, Mount Echigo-Komagatake, and Mount Nakanodake.
During the winter, cold air flowing in from the continent and moist air carried by the warm currents of the Sea of Japan collide with the Echigo Sanzan mountains, causing snow to fall. The snow moistens the mountains, nourishes the soil, and over a long period of time flows down the Shinano River from the mountains into the Sea of Japan.
The Niigata Terroir course begins with the plate of the Echigo Sanzan mountains, the starting point of all this "blessing."
"Demitasse cups made by local potters"
Made from ash from local wood, the Tanagokoro demitasse cup is heavy when held in the hand and when brought close to the mouth.
A dish that focuses on good balance.
The course concludes with a small, comfortable cup made by a local ceramic artist.
In addition to major wines from France and Italy,
We offer carefully selected wines made from grape varieties from Croatia, Spain, and Brazil, which are closely related to Bernatio.
We offer a lineup of delicious, carefully selected wines from around the world, including domestic wines.
You can also enjoy the pairing of Niigata Prefecture sake, described as "light and refreshing," with the food.
