"The story begins in the Echigo Sanzan mountains"

The three mountains of Echigo are Mount Hakkai, Mount Echigo-Komagatake, and Mount Nakanodake.
During the winter, cold air flowing in from the continent and moist air carried by the warm currents of the Sea of Japan collide with the Echigo Sanzan mountains, causing snow to fall. The snow moistens the mountains, nourishes the soil, and over a long period of time flows down the Shinano River from the mountains into the Sea of Japan.
The Niigata Terroir course begins with the plate of the Echigo Sanzan mountains, the starting point of all this "blessing."

Made from ash from local wood, the Tanagokoro demitasse cup is heavy when held in the hand and when brought close to the mouth.
A dish that focuses on good balance.
